Do deputies ever agree to screen posts to check for civility violations? Like, if I've written a post that I want to make sure is kosher enough then would it be "the thing to do" to send it to a deputy to preview it? Or is that not part of their functions?

Pre-screening posts isn't part of the deputies' responsibilities. Any poster can be a Civility Buddy for another, if you aren't sure whether something you want to post is within the guidelines for civility.But, using this buddy system is not a guarantee that a post will be declared civil, once posted.
